THE TRADITION

On February 5, many towns in Castile and León celebrate a festival in honor of Saint Agatha—a virgin and martyr from the 3rd century. It is a very popular and deeply rooted festival, especially in rural areas, during which women, known as “Las Águedas,” take charge of towns and cities.

The event is organized by a female mayor and the stewardesses. Over the course of several days, alongside the religious celebrations, other more festive and recreational activities take place, such as the “toma de varas” (ceremonial staff-taking), folk dances, bonfires, and feasts…

THE WINE

Variety: 100% Malvasía

Category: White wine aged on lees

Age and type of vineyard: Grapes from the

“El Pendón” plot. Sandy soil with a high percentage of limestone. Altitude: 780 m.

Harvest: Hand-picked

Winemaking: Cold maceration (8–10°C) for 12 hours in a tank, followed by pressing and fermentation at a low temperature (14–16°C)

Aging: Aged for 8 months on lees with bâtonnage in 300-liter French oak barrels with light toasting, followed by 8 months of bottle aging.

TASTING NOTES

Golden yellow color. Aromas characteristic of Malvasia, such as white flowers, apricot, and quince. Honey, almond, pine nut, and clove. On the palate, it exhibits acidity that imparts freshness, along with smoothness, roundness, and body.
