TASTING NOTES
The name dates back to the Middle Ages, when winemakers in the Lot region produced “Vin Noir” (Black Wine) by heating some of the grapes. This wine was prized by the English Royal Courts. Reviving this medieval practice, Jean-Luc Baldès restores the splendor of this forgotten flavor by using a plum oven to gently heat the must—a winemaking process that has not been used in centuries.
